How to Make the Risueño

  • Place 1 pc grapefruit zest, 0.15 oz of rosemary, and 0.35 oz of simple syrup in a shaker
  • Pour in 0.75 oz of lemon juice, 0.35 oz of quail egg white, and 0.75 oz of silver tequila
  • Add 2 dashes of orange flower water and 2 oz of fino sherry and shake gently without ice
  • Fill the shaker with ice cubes and shake one more time
  • Strain through a strainer and sieve into a cocktail glass
  • Garnish with an orange wheel and a sprig of thyme on a clothespin
