Homemade maple syrup

    Julien Escot, recipe sufficient for 17 oz: pour 17 oz of maple syrup in a saucepan, add 3 bar spoons of Cajun spices and 2 halved vanilla pods. Stir while heating, but do not bring to the boil. Fine strain into a bottle and refrigerate.
