Homemade citrus oleo

Stuart Morrow’s recipe, good for 3 oz: place 30 oz g of lemon zest and 30 oz of orange zest into a container, then pour in 30 oz of powdered sugar. Close the container and leave to rest for 2-3 days at room temperature. Filter the resulting oil into a separate container and store in the refrigerator.
