How to Make the Portuguese Flip

  • Pour 5 quail egg yolks, 0.75 oz of heavy cream, 0.5 oz of sugar syrup, 0.75 oz of Tawny port and 1 oz of calvados into a shaker
  • Fill the shaker with ice cubes and shake thoroughly
  • Strain into a chilled sour glass
  • Garnish with a pinch of ground cinnamon
