How to Make the Cardinal Mulled Wine

  • Place a chopped apple wedge and 8 bar spoons of blackcurrant jam into a milk pitcher
  • Add two stripes of orange zest and a star anise, a cinnamon stick and a clove
  • Pour in 1.75 oz of apple juice, 7 oz of dry red wine and 0.75 oz of cognac
  • Stir while heating, but do not bring to the boil
  • Pour into a teapot
  • Serve on a base with a candle to prevent the cocktail from cooling
