    Dominic Walsh’s recipe, good for 30 oz: place 15 oz of lemon zest, 15 oz of sugar, and 15 oz of lemon juice into a plastic bag. Squeeze the air out of the bag and infuse for 12 hours. Then filter the liquid into a separate container.
