    Mascarpone cheese

    An Italian dessert made from cream cheese, with a fat content of around 25%. Cream is heated in a water bath (75-90° C) with the addition of tartaric acid, lemon juice or vinegar. After fermentation is complete, the product is cooled, suspended and drained in a cool place.
