A Spanish dry fortified wine produced by fermenting Palomino sherry grapes with the addition of special yeast. Matured for at least 12 months, the wine is covered by a special film, called flor. It is then enriched with grape alcohol and matured in barrels using the solera method – first under the protective film, and then without it.
