    How to Make the Chocolate Ocean

    • A 1.5-liter bottle should make enough for about 5 Collins glasses
    • Pour 7 oz of honey, 33 oz of still water, and 3 oz of cognac into a blender
    • Add 5g of salt, 7 oz of homemade cacao distillate, and 200ml of sake
    • Blend gently
    • Filter the liquid through cheesecloth into a bottle
    • Serve the cocktail in a Collins glass with rocks ice
    • Before serving, carbonate the cocktail in a Perlini shaker
    • Garnish with a samphire sprig
